Freeze In Advance Meals – Recipe of the Day
Chicken Enchilada Skillet
**We made this in the class and it was very simple and delicious
1 package (16 oz) frozen broccoli, corn, & pepper mix – (or any veggies you would like we actually used carrots and beans)
1 package taco seasoning
1 can (14 ½ oz) stewed tomatoes
3 cups shredded cooked chicken
1 cup Monterey Jack grated cheese
Tortilla Chips
Combine vegetables, seasoning, tomatoes and chicken. Label and freeze.
To prepare: Thaw. In a large skillet, bring mixture to a boil. Cover and cook 4 minutes or until vegetables are done. Sprinkle with cheese. Cover and cook 2 more minutes or until cheese melts. Serve with chips.
***When we did in class today we just had the chicken prepared in separate bag. We put the frozen veggies, seasoning packet, can of tomatoes, and frozen chicken in a crockpot. We put in a half a can of water, put it on high until it was warm (maybe 15 minutes). Sprinkled the cheese ontop and served with the chips. It was great!!
